Ready for the cutest cupcakes of the summer? These Palm Tree Cupcakes are easy to make and will steal all the attention at your next party!  I’m serious, these are a showstopper and I even took them one step further and added a cute “towel” and teddy to the island scene!  I started with the fabulous Pillsbury Purely Simple Cake Mix to give me a head start!

Making the pretzel palm trees is actually really easy!  It would make for a great cupcake decorating activity.  And because step by step photos can only show so much, Pillsbury had me make a video for you all!  So you can see every step to making these adorable cupcakes 🙂

A friend sent me a photo of Just a Taste’s Palm Tree Cupcakes and I knew I had to put my own spin on the recipe and add these adorable “towel” and teddies! I mean, look how cute he is out there on his island getting tan…

You can leave the island palm tree and just serve them like that, or you can add a Fruit by the Foot “towel” and a Teddy Graham tanning on the island!  Just use a pair of scissors to cut your “towels’ and then use some frosting to secure the towel and the teddy the the cupcake island!

 

 

I am a rock, I am an I-i-island (cupcake).  That’s how the song goes, right?  Right.

In the video I use the canned frosting but you can use any frosting you want, including the new Purely Simple Buttercream Frosting Mix.  I can’t tell you how many emails I get about frosting.  It can be tricky because powdered sugar is hard to measure unless you weigh it on a scale.  One cup could be 1 1/2 cups for someone else just depending if you pack it in or not.  But wit this new mix, all you do is add water and butter and your frosting will be perfect every time. And without any added colors, preservatives or artificial flavors.

Palm Tree Cupcakes

  • CUPCAKES:
  • 1 Box Purely Simple Cake Mix
  • 3 eggs
  • 1 C. milk
  • 1/2 C. butter softened
  • VANILLA FROSTING
  • 1 1/2 C. crushed graham crackers
  • 12 Pretzel Rods broken in half
  • 1 1/2 C. green Melts
  • green sprinkles
  • Fruit by the Foot 2
  • Teddy Grahams 24
  1. 1. Preheat oven to 350 degrees and line pans with cupcake liners.

  2. 2. Combine cake mix, eggs, milk and butter. Beat until smooth.

  3. 3. Fill cupcake liners 3/4 full and bake for 15-20 minutes.

  4. 4. Let cool.

Palm Trees: (watch video above) Melt chocolate melts, then use a small ziplock back with the corner snipped off to pipe chocolate on the top of the pretzel creating the "palms" and immediately top with sprinkles. Continue to do this with each pretzel rod. (Work on top of parchment paper for an easy clean up.) Let cool for 5-10 minutes.

  6. 6. Top cupcakes with vanilla frosting and then roll in crushed graham crackers. Stick in your palm tree and add your Fruit by the Foot "towel" and teddy!

It is simply impossible to take your eyes off Palma - such a simple and beautiful solution! I also wanted to paint on the native with melted chocolate or decorate the cream around the palm tree with almond petals. The classic version with fruit slices is usually filled with gelatin in a detachable form. Also, I cut out rings of different sizes from soft and ripe fruits and berries and put them one into the other in several levels, and inside - either a berry or a dome from any whipped cream - it also turns out interesting. And I make such hedgehogs separately - I didn’t even think that they could decorate a cake!

Fruit-decorated cakes are my weakness, I don't like tons of heavy buttercream or cream. There are several secrets to make the decorations on the cake look generally elegant. Sprigs of currants, red and black, dip strawberries well in gelatin dissolved in syrup. It will cover the berries with a shiny film, making them more elegant. If such sprigs of berries are lightly greased with egg white whipped with sugar, then snow-covered tassels will turn out. And most importantly, no matter how sour fruits seem, do not sprinkle them with sugar, they will instantly give juice and the cake will turn into jelly. Dust lightly with powdered sugar. And just before serving.

Cake with palm trees

in the near future it will not work out, we can make sure that both palm trees, and sand, and even the sea are on our table. Today we are preparing a simple and very unusual biscuit cake that will delight everyone.

  • 45 ml cream
  • 3 tablespoons of corn syrup
  • 6-8 sheets of gelatin (about 15 g)
  • Blue food dye (preferably in the form of gel)

  • How to make an unusual cake "Desert Island"


    1. We will start with the preparation of biscuit dough. To do this, mix flour, baking powder, soda and salt in a deep bowl.
    2. In a separate bowl, mix 60 g soft butter, vegetable oil, sugar and brown sugar, add lemon juice and mix until smooth.
    3. Add the eggs, then add the dry ingredients while adding the milk and knead the dough.
    4. When the dough is smooth, carefully pour it into a greased round baking dish measuring about 30 cm.
    5. Let the finished biscuit cool down.
    6. When the biscuit has cooled down, cut off the top part of it - a little less than half.
    7. We need to cut off the top cake, stepping back about one centimeter from the edge. The best way to do this is with a bowl of the right size and use it as a template.
    8. Then, using an ordinary thick straw, make holes along the edge of the cake.
    9. Moving on to the bottom of the biscuit: using the same bowl, mark a circle of smaller diameter on the cake, and then carefully remove the biscuit from it with a spoon so that there is free space. The main thing is not to pierce the cake through.
    10. The biscuit that we took out of the cake is mixed with the remaining butter to make a thick sand-colored mass. We cover the edges and the inner surface of the recess in the cake with this mass, and then put the cake in the refrigerator for 30 minutes.
    11. Now let's prepare the icing for the cake. We soak the gelatin in cold water, and in a saucepan heat the water and sugar to a temperature of just over 100 ° C - this is necessary for our glaze to become shiny.
    12. When the mixture is hot, remove the saucepan from the stove and add the chocolate. Stir the mixture well and add the corn syrup and cream - by this point the icing should be smooth and uniform, like a runny cream.
    13. Once the frosting has cooled to 60 °C, add the gelatine. The resulting mass is best mixed with an immersion blender, we need to avoid the appearance of bubbles. In the process of pureeing, add a little food coloring.
    14. Finished glaze must cool down to 28-30 °C, then we can use it.
    15. Council. If you do not want to monitor the temperature of the glaze, you can not do this. The icing is delicious even without it, although not so shiny.
    16. It's time to put our Desert Island cake together. To do this, put the detachable form with the bottom cake on a large plate or baking sheet.
    17. Carefully pour 3/4 of the glaze through a sieve into the cavity in the cake.
    18. Cover the icing with the top layer - it should fit perfectly in the recess - and press it down so that the icing seeps through the holes and spreads around the edges of the cake. Only the “island” of the upper cake should stick out above the icing.
    19. Let the icing thicken and then carefully remove the cake from the mold. We decorate it with “palms” of chocolate-covered straws and fresh mint (we use melted chocolate as “glue”), add “greens” from chopped pistachios - and our delicious cake is ready!
